2 HOURS OF HEAD TO TAIL LAMB BUTCHERY starting with the basics our skilled butchers will demonstrate and instruct full carcass lamb butchery. course itinerary: -Introduction to hygiene and best practice - knife skills and safety - THE WHOLE LAMB -starting with the whole lamb carcass our butchers will talk you through where the different cuts are located on the lamb and their uses - Primal Demonstration - our butchers will demonstrate and instruct on breaking the whole lamb in to the "Primal" cuts - the larger sections of the carcass in the first stage of butchery before trimming and boning turns them into the recognizable cuts and joints you would see in the butchery counter. - PRIMAL CUTS - this is the chance to get to grips with turning a large primal cut into the joints of lamb ready for the kitchen. - TRIMMING AND BONING, the more delicate and precise process of fine trimming the primal cuts into various chops, steaks, diced and mince - PROCESSING the last part of the course takes the smaller cuts and trimmings and processes them into tasty treats such as burgers, meatballs and kofta We use our carefully selected Cotswold lamb from local farms throughout the course TO TAKE HOME: all class participants will have a section of their very own finely butchered lamb delicacies to enjoy at home.
